I craved some beets the other day and decided to make a creamy spread to put on toast. I ultimately decided to use what I had on hand, which was cream cheese and it ended up turning out delicious. Plus beets are super nutritious, so bonus.

Beets are a nutrient-dense vegetable that are packed with vitamins, minerals, and antioxidants. One of the most notable compounds found in beets is betalains, which give beets their deep red color and have been linked to numerous health benefits, including reducing inflammation and potentially lowering the risk of certain types of cancer. Beets and cream cheese make a delicious dip because the flavors and textures complement each other very well. Here are a few reasons why:

INGREDIENTS: BEET SPREAD 4 small boiled or roasted beets, peeled 1/2 lemon, juiced 1-2 tbsp cream cheese 1 clove garlic Salt & pepper Add everything to food processor, blend until smooth. Taste and adjust TOAST STUFF 1 piece of bread, Toasted 1 egg, poached Arugula dresses in olive oil, lemon, salt Pepper To poach the egg, bring a small pot of water to a soft boil, and add in a touch of vinegar. Use a spoon to stir the water around and gently add the egg. Use the spoon to fold the whites around the yolk gently. Watch video above for a demo, if needed. Spread beet mixture over toast, layer w/ arugula, and add the poached egg, and some fresh black pepper on top. Enjoy!
