I craved some beets the other day and decided to make a creamy spread to put on toast. I ultimately decided to use what I had on hand, which was cream cheese and it ended up turning out delicious. Plus beets are super nutritious, so bonus.

BEET & POACHED EGG TOAST
INGREDIENTS: BEET SPREAD 4 small boiled or roasted beets, peeled 1/2 lemon, juiced 1-2 tbsp cream cheese 1 clove garlic Salt & pepper Add everything to food processor, blend until smooth. Taste and adjust TOAST STUFF 1 piece of bread, Toasted 1 egg, poached Arugula dresses in olive oil, lemon, salt Pepper To poach the egg, bring a small pot of water to a soft boil, and add in a touch of vinegar. Use a spoon to stir the water around and gently add the egg. Use the spoon to fold the whites around the yolk gently. Watch video above for a demo, if needed. Spread beet mixture over toast, layer w/ arugula, and add the poached egg, and some fresh black pepper on top. Enjoy!
