3-INGREDIENT MEALS - SALSA VERDE BLACK BEAN SOUP

I have had so much fun coming up with recipes for this series, 3-ingredient meals. The parameters have forced me to get creative, and I love that.


This soup is flavorful, and simple and comes together in like 5 minutes. Seriously, its the best. I kept it simple to stay within the series guidelines, but you can absolutely dress it up with all kinds of garnishes like crushed red pepper, chili onion crunch, pickled red onions, avocado, cilantro, soup cream, you name it! Possibilities are endless.




Salsa verde, which is a sauce made from tomatillos, onions, chili peppers, and other seasonings, goes well with black beans for several reasons:

  1. Complementary flavors: Salsa verde has a tangy, slightly sweet flavor that pairs well with black beans' earthy, nutty flavor. The acidity in the salsa helps to balance the richness of the beans.

  2. Texture contrast: Salsa verde has a slightly chunky texture that provides a nice contrast to the soft, creamy texture of black beans. This contrast in texture adds interest to the dish.

Salsa Verde Black Bean Soup


Makes 1 serving


Primary ingredients:

1 can of black beans

1/2 cup salsa verde

1 1/2 tbsp Cotija or feta cheese, plus more for garnish (regular or vegan)


Staple pantry items:

1/4 cup water

Optional garnish:

Green onion

Crushed red pepper

Avocado

Picked red onion


Add black beans, their liquid and the salsa to a pot, heat and stir over medium heat for 5 minutes. Add the water and cheese to a blender with the bean mixture and blend until smooth. Add more water or salsa if you desire a thinner soup. Transfer to a bowl, and garnish with more salsa, cheese and optional green onion.
