3-INGREDIENT MEALS: CRISPY POLENTA, ROASTED TOMATOES & CREME FRAICHE

This weeks 3-ingredient meal where I show you how to make a delicious dish with 3 primary ingredients plus a handful of staple pantry items.
Polenta, crème fraiche & roasted tomatoes.
Polenta, creme fraiche, and roasted tomatoes are all flavorful ingredients that complement each other well in a dish. Here are some reasons why this combination can make a delicious meal:
Polenta is a versatile ingredient that can take on many flavors and textures. It has a mild corn flavor that pairs well with other ingredients. It can be creamy, crunchy, or even grilled to add a smoky flavor.
Creme fraiche is a tangy, creamy ingredient that adds richness and depth to a dish. Its acidity balances out the sweetness of the roasted tomatoes and adds a bright note to the dish.
Roasted tomatoes are bursting with umami flavor that comes from their natural sugars caramelizing in the oven. The slow roasting process concentrates the flavor of the tomatoes and adds a depth of flavor to the dish.
When combined, the creamy polenta provides a neutral base for the tangy creme fraiche and savory roasted tomatoes. The creaminess of the polenta also balances the acidity of the creme fraiche and the sweetness of the tomatoes. The result is a delicious, comforting meal with a complex flavor profile.
PRIMARY INGREDIENTS
1 lbs cooked polenta, sliced 1/2 inch
1 lb grape or sugar plum tomatoes, punctured
6 oz crème fraiche (or cream cheese or goats cheese works too)
STAPLE PANTRY ITEMS
Olive oil
Aged balsamic vinegar or glaze
S&P
Garlic
Fresh basil & thyme (optional)
Parmesan (optional)
Pre-heat oven to 350f. Oil a baking dish, spread out tomatoes, cover with a little more oil, salt, pepper, garlic, thyme & balsamic vinegar. Roast for 20-25 minutes.
Season polenta disks with salt and pepper. Heat olive oil in a large skillet over medium high heat, cook polenta on each side for 6-8 minutes on each side until golden brown.
Let both tomatoes and polenta cool!!!! Once cool, top poltena with crème fraiche, then add on tomatoes, pepper, fresh basil, & Parmesan if using. Enjoy!
